Guys, if you are doing the cooking this year, try this.
Roll the bird in rock salt and coat the inside too. Seal it up in a garbage bag real tight and let it thaw or sit for 3 days...or as many days as you have left.
When you get ready to cook it, inject the bird with chicken broth and cook per direction in a sealed foil tent. Better yet is to use a oil fryer.
Take the foil off for the last 1/2 hour and turn the heat up to 400 for a crisp skin
